Chicharrón is one of the most popular dish in Latin America and one of the most flavourful but, what's chicharrón?
Chicharrón is fried pork. There are two types: pork rinds (which is flat) and pork meat (which are the chunky pieces). It is used in several recipes from all around Latin America, like "gorditas" in México and "Pupusas revueltas" in El Salvador.
If you haven't tried it before I recommend to try the chunky pieces, being in a taco (adding lime juice and hot sauce), bathed in green sauce or by itself. It's one of the most flavourful things Latin America has to offer.
